Ingredients
  

  • For the Chicken:
  • 2 large chicken breasts sliced in half lengthwise (to make cutlets)
  • 2 eggs beaten
  • 1/4 cup milk
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour for dredging
  • 1/2 cup olive oil for frying
  • For the Sauce:
  • 2 cups marinara sauce homemade or store-bought
  • 3 cloves garlic minced
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • 1 tbsp olive oil
  • For Topping:
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley chopped (for garnish)

Instructions
 

  • 1️⃣ Prep the Chicken
  • Slice each chicken breast in half lengthwise to create four thinner cutlets.
  • Pound them lightly to 1/2-inch thickness.
  • 2️⃣ Bread the Chicken
  • Set up three bowls:
  • Mix flour, salt, and pepper.
  • Whisk together eggs and milk.
  • Combine breadcrumbs, Parmesan, oregano, and garlic powder.
  • Dredge each cutlet in flour, then egg mixture, then breadcrumbs, pressing to adhere.
  • 3️⃣ Fry to Golden Perfection
  • Heat olive oil in a large skillet over medium heat.
  • Fry each cutlet for 3-4 minutes per side until golden brown and crispy.
  • Transfer to a paper towel-lined plate.
  • 4️⃣ Make the Sauce
  • Heat olive oil in a small saucepan over medium heat.
  • Sauté garlic until fragrant, then add marinara sauce, basil, and red pepper flakes.
  • Simmer for 5 minutes.
  • 5️⃣ Assemble & Bake
  • Preheat oven to 400°F (200°C).
  • Spread a thin layer of marinara sauce in a baking dish.
  • Place chicken cutlets in the dish and spoon marinara over each piece.
  • Sprinkle generously with mozzarella and Parmesan cheese.
  • Bake uncovered for 10-15 minutes until cheese is melted and bubbly.
  • 6️⃣ Garnish & Serve
  • Let rest for a few minutes.
  • Garnish with fresh basil or parsley and serve hot!
