Ingredients
  

  • For the Chicken:
  • 2 large chicken breasts sliced in half lengthwise (to make cutlets)
  • 2 eggs beaten
  • 1/4 cup milk
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour for dredging
  • 1/2 cup olive oil for frying
  • For the Sauce:
  • 2 cups marinara sauce homemade or store-bought
  • 3 cloves garlic minced
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • 1 tbsp olive oil
  • For Topping:
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley chopped (for garnish)

Method
 

  1. 1️⃣ Prep the Chicken
  2. Slice each chicken breast in half lengthwise to create four thinner cutlets.
  3. Pound them lightly to 1/2-inch thickness.
  4. 2️⃣ Bread the Chicken
  5. Set up three bowls:
  6. Mix flour, salt, and pepper.
  7. Whisk together eggs and milk.
  8. Combine breadcrumbs, Parmesan, oregano, and garlic powder.
  9. Dredge each cutlet in flour, then egg mixture, then breadcrumbs, pressing to adhere.
  10. 3️⃣ Fry to Golden Perfection
  11. Heat olive oil in a large skillet over medium heat.
  12. Fry each cutlet for 3-4 minutes per side until golden brown and crispy.
  13. Transfer to a paper towel-lined plate.
  14. 4️⃣ Make the Sauce
  15. Heat olive oil in a small saucepan over medium heat.
  16. Sauté garlic until fragrant, then add marinara sauce, basil, and red pepper flakes.
  17. Simmer for 5 minutes.
  18. 5️⃣ Assemble & Bake
  19. Preheat oven to 400°F (200°C).
  20. Spread a thin layer of marinara sauce in a baking dish.
  21. Place chicken cutlets in the dish and spoon marinara over each piece.
  22. Sprinkle generously with mozzarella and Parmesan cheese.
  23. Bake uncovered for 10-15 minutes until cheese is melted and bubbly.

  25. Let rest for a few minutes.
