Ingredients
4 heirloom tomatoes, sliced
1/4 cup ricotta salata cheese, crumbled or shaved
1/4 red onion, thinly sliced
10 kalamata olives, pitted and halved
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
Salt and freshly ground black pepper, to taste
Fresh basil leaves, torn
Instructions
1. Slice the heirloom tomatoes into thick rounds and layer them on a large serving platter.
2. Top with red onion slices, olives, and ricotta salata.
3. Drizzle with olive oil and red wine vinegar.
4. Season with salt and pepper to taste.
5. Garnish with torn basil leaves and serve immediately.
Notes
Ricotta salata adds a salty richness, so go easy on the salt until after tasting.
This salad pairs wonderfully with grilled shrimp, chicken, or a crusty baguette.
