Ingredients
1 tablespoon butter
3 garlic cloves, minced
1 cup whole milk ricotta cheese
1/2 cup grated Parmesan cheese
1/2 cup whole milk
Salt and pepper to taste
Pinch of ground nutmeg
1/4 cup reserved pasta water
Instructions
1. In a large skillet over medium heat, melt butter and sauté garlic for 1 minute.
2. Add ricotta and stir until melted.
3. Slowly whisk in milk and blend until smooth.
4. Add Parmesan, salt, pepper, and nutmeg.
5. Thin with pasta water if needed and continue stirring until creamy.
6. Toss with cooked pasta or serve over your favorite protein.
Notes
Use whole milk ricotta for a smoother texture.
Add lemon zest for brightness.
Pairs well with grilled chicken, shrimp, or vegetables.
