Ingredients

  • 1 (3 to 4 lb) beef shoulder roast
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 large onion, sliced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1/2 cup red wine (optional)
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a small bowl, combine salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Rub roast with olive oil and the seasoning blend.
  4. Heat a skillet over medium-high heat and sear roast on all sides until browned.
  5. Place roast in a Dutch oven or roasting pan with onions, carrots, and celery.
  6. Add beef broth, red wine, mustard, and Worcestershire sauce if using.
  7. Tuck in rosemary, thyme, and bay leaves.
  8. Cover tightly and roast in oven for 3 to 4 hours, or until fork-tender.
  9. Remove from oven and let rest, covered, for 15–20 minutes.
  10. Slice or shred and serve with pan juices or make a gravy from the drippings.

Notes

Avoid opening the oven frequently to maintain consistent cooking temperature. Leftovers can be used in sandwiches, soups, or grain bowls for easy weekday meals.
