- 1 (3 to 4 lb) beef shoulder roast
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 2 bay leaves
- 1 large onion, sliced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups beef broth
- 1/2 cup red wine (optional)
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon Worcestershire sauce (optional)
Instructions
- Preheat oven to 300°F (150°C).
- In a small bowl, combine salt, pepper, garlic powder, onion powder, and smoked paprika.
- Rub roast with olive oil and the seasoning blend.
- Heat a skillet over medium-high heat and sear roast on all sides until browned.
- Place roast in a Dutch oven or roasting pan with onions, carrots, and celery.
- Add beef broth, red wine, mustard, and Worcestershire sauce if using.
- Tuck in rosemary, thyme, and bay leaves.
- Cover tightly and roast in oven for 3 to 4 hours, or until fork-tender.
- Remove from oven and let rest, covered, for 15–20 minutes.
- Slice or shred and serve with pan juices or make a gravy from the drippings.
Notes
Avoid opening the oven frequently to maintain consistent cooking temperature. Leftovers can be used in sandwiches, soups, or grain bowls for easy weekday meals.
